Food columnist Mark Bittman recently appeared on MSNBC’s talk show Morning Joe––hosted by Joe Scarborough, Mika Brzezinski, and Willie Geist––to discuss the health benefits of a whole-foods, plant-based diet. His new book VB6: Eat Vegan Before 6:00 has piqued the interest of vegans and omnivores alike, and encourages eating fruits, vegetables, nuts, and legumes for two out of three meals per day. This plan, the author says, offers a strategy and structure to better eating habits. “We know that vegetarians and vegans have longer life expectancies than meat eaters,” Bittman tells the Morning Joe panel, “The science says eat more plants.” Bittman believes after eating mindfully for the majority of the day, the rules can be relaxed for the evening hours.
