The special Easter Brunch menu will please every palate with its multitude of options. Enjoy savory crepes, chilaquiles, breakfast burritos, pancakes, an assortment of freshly baked goods, and more. 2. Saturn Cafe, Oakland, CA
Need to relax from a stressful morning of vegan-friendly egg hunting (plastic eggs for the win!)? Saturn Cafe is offering a $13 special on bottomless mimosas and Saturn Fizzes. 3. Spiral Diner, Multiple Locations, TX
The regular menu of this Texas-based vegan diner is already Texas-sized; so while there may not be room for holiday specials, the restaurant is doing something special for the holiday. Ten percent of all Easter Sunday sales will go toward Wild Rescue, a rabbit rescue group in North Texas. Enjoy a pot of joe and a towering stack of vegan pancakes knowing that your meal is helping some bunny in need. Might as well order a side of biscuits and gravy and tofu scramble—it’s for a good cause!

4. Leaf Vegetarian Restaurant, Boulder, CO
Make your reservations at Leaf if you are a self-proclaimed French toast connoisseur; this vegan-friendly restaurant’s Vegan Banana Bread French Toast with Macerated Berries and Peach “Butter” might just be one of the best in the West, or at least the state. The kitchen will also run a Vegan Chef Special for the holiday, though the chef hasn’t quite decided on what this might be. No matter what, you’re sure to find something that suits from this comforting menu.

5. J. Selby’s, Saint Paul, MN
This midwestern vegan eatery focuses its menus around the concepts of “familiarity, sustainability, and ethics.” Expect to find classics such as biscuits and gravy, scrambles, and pancakes, but the Sunday brunch menu also gets a bit creative with J.’s Mess—a large plate of breakfast potatoes, tofu scramble, a biscuit, “sausage” gravy, and toast. On Easter, the chef is preparing a seasonal customer favorite—Spicy Hash made with potatoes, Herbivorous Butcher sausage, peppers, and onions, all smothered with an Isa Chandra Moskovitz-inspired spicy sauce. Save room for brunch dessert; the Strawberry Rhubarb Shortcake won’t be around for long!

6. True Bistro, Somerville, MA
While it is a bit of a trek from the T stop in Davis Square, this elegant plant-based bistro is worth the walk—even with the most unpredictable New England weather (don’t be surprised by snow on Easter). The crepes are absolutely divine and filled with either banana and chocolate-hazelnut spread or blueberries, lemon, and lavender ice cream. For something savory, opt for the Tofu Benedict made with a homemade biscuit, seared tofu, garlic spinach, and saffron béarnaise sauce. While the entire menu is tempting, leave room for the Easter specials. Chef Stuart is still putting the finishing touches on this, but he is excited to share his beautifully plated holiday dishes with the restaurant’s brunch patrons.

7. Vegetable, Los Angeles, CA
This tiny vegetarian bistro makes some of the most exquisite food in Los Angeles—if not all of Southern California—yet many residents are unaware of its existence. Discover a new restaurant and support a local small business by enjoying the phenomenal selection, many of it prepared with local produce and products, such as the LA-based Blode Kuh vegan cheese. Choose from the regular brunch menu which leans heavily on the savory side, or opt for one of the six holiday specials. These include “Rabbit Food” Avocado Toast, Deviled Eggs (made from potatoes), Vegan Asparagus & Spring Peas Mac & Cheese, 3 Carrot Soup, “Carrot Cake” French Toast, and Carrot Cake Parfait in a Mason Jar.  Note: Vegetable does not sell alcohol, but if you want a floater on your kombucha or freshly squeezed orange juice, there’s a liquor store down the street and you’re welcome to bring in a bottle of bubbly.

8. Fig + Farro, Minneapolis, MN
This chic plant-based restaurant isn’t just serving up incredible eats in Minneapolis; the owners are on a mission to combat climate change with every dish served. For each patron, the restaurant plants a tree via its partnership with Trees.org. Enjoy a wide selection of brunch favorites—tofu egg dishes, grits, biscuits and gravy, and the highly recommended World Famous Giant Blueberry Cinnamon Roll—knowing that your meal is paying it forward. The chef is also creating a special Easter dessert in the form of a round vegan cheesecake topped with coconut “grass” and edible flowers, meant to replicate an Easter basket. Cheers to the planet with bottomless mimosas or a Let’s Get Fizzical, a fun bubbly cocktail of kombucha and prosecco!

True to its Italian American roots, this vegan wine bar and restaurant holds Easter in high regard. Those with reservations can look forward to holiday brunch specials including Carciofi alla Romana (gluten-free braised artichokes in a white wine sauce), Italian Wedding Soup (spring vegetables, pastina, and mini mushroom lentil meatballs in a savory broth), Torta Pasqualina (puff pastry stuffed with swiss chard, cashew ricotta, garbanzo egg, and romesco sauce), and Paccheri (shaved zucchini in a lemon herb cream sauce). Even if it’s before noon, you don’t want to pass up the selection of organic California vegan wines!

If we lived closer, we’d make Eve’s hidden dining room our permanent workspace. The spacious venue is charming and eclectic, furnished with comfy couches, pillows, and stacks of books. The dining tables are set in their own little alcoves, offering a private space for your group while offering a view of the open communal space. The restaurant’s vegan Easter brunch menu includes Huevos Rancheros, a Breakfast Sandwich, Warm Oatmeal with cranberry pear compote, an Elvis-inspired stack of pancakes (complete with vegan Nutella and coconut bacon), and a BLTA Wrap. Add on a hearty slice of the daily vegan quiche—do not skip this—to complete your meal.
