Vegan French Bread Pizza
This is one of my all-time favorite pizzas, compliments of Joanne Stepaniak from The Ultimate Uncheese Cookbook.

Serves 4 to 6
What you need:
- 1 loaf French bread cut in half width- and lengthwise
- 1/2 pound firm tofu, rinsed, drained and crumbled
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 tablespoon tamari
- 1 teaspoon ground fennel or dried basil
- 1 teaspoon dried oregano
- 1 teaspoon crushed garlic
- 1/8 to 1/4 teaspoon cayenne
- Salt and pepper to taste
What you do:
- Preheat oven to 450 degrees. Place French bread, sliced sides up, on a baking sheet or pizza stone.
- Combine tofu, tomato paste, olive oil, tamari, fennel or basil, oregano, garlic and cayenne in a food processor and blend into a smooth paste. Spread mixture evenly over bread and sprinkle with salt and pepper to taste.
- Bake for 10 to 15 minutes, until French bread is golden brown. Serve hot.
