Their story: While traveling in New Zealand in 2008, Meghan met Gareth on one of her last nights in the country. At midnight, the two met during a mutual friend’s going-away party at a bar. They clicked and talked long into the night, but Meghan had to head back to the States two days later. The relationship flourished over Skype and email, and about three months later, Gareth bit the bullet and traveled to the US for a three-week visit, which ended up lasting until his visa ran out. Soon, Gareth returned to New Zealand and began searching for an eco- and socially conscious engagement ring. Unbeknownst to Meghan, Gareth had the ring sent to her hometown in Tennessee in preparation for his impending visit. Once he arrived, Gareth and Meghan’s mom did the ring hand-off, and he talked Meghan into bringing him to one of her favorite spots—Smoky Mountain National Park. Gareth asked her to marry him amongst the trees and wide-open skies.
