Earlier this year, the Active Learning School in Queens, New York, began serving only vegetarian food in its cafeteria, and since then, school officials have reported that students are excelling academically and have improved attention spans. “We believe that [students] achieve better when they have healthier food choices and are educated about those food choices,” said the school’s principal Bob Groff to New York Daily News. In addition to serving pupils nutritious food options such as roasted tofu, braised black beans, falafel, and veggie wraps, the Active Learning School has also done away with soda vending machines and now offers students weekly nutrition classes.
