Mixed Green Spring Salad

This recipe meets my three-rule requirement for any great salad: it has color, crunch, and it’s easy to make.

What You Need for the Salad:

  • 1 large bag of mixed spring greens
  • 1 cup radicchio or red cabbage, cut into bite-sized pieces
  • 1 15-ounce can garbanzo beans, rinsed
  • 1 carrot, grated or finely chopped
  • 1 cucumber, peeled, seeded, and cut into small pieces

What You Need for the Dressing:

  • 2 teaspoons olive oil
  • 1 teaspoon flax seed oil
  • 1 teaspoon vinegar of your choice
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

What you do:

  1. Combine all salad ingredients in a large bowl. 
  2. Whisk together dressing ingredients in a small bowl and pour over salad. Toss gently and serve.
