Mixed Green Spring Salad
This recipe meets my three-rule requirement for any great salad: it has color, crunch, and it’s easy to make.

What You Need for the Salad:
- 1 large bag of mixed spring greens
- 1 cup radicchio or red cabbage, cut into bite-sized pieces
- 1 15-ounce can garbanzo beans, rinsed
- 1 carrot, grated or finely chopped
- 1 cucumber, peeled, seeded, and cut into small pieces
What You Need for the Dressing:
- 2 teaspoons olive oil
- 1 teaspoon flax seed oil
- 1 teaspoon vinegar of your choice
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
What you do:
- Combine all salad ingredients in a large bowl.
- Whisk together dressing ingredients in a small bowl and pour over salad. Toss gently and serve.
