Cashew Fondue
Cashew nuts are an excellent source of iron, magnesium, phosphorus, zinc, and selenium. The fondue is delicious stuffed in a tomato or chile pepper, rolled up with fresh vegetables in nori, or used as a dip for crudité.

Serves 4
What you need:
- 1 clove garlic
- 1 teaspoon sea salt
- 2 cups cashews
- Juice of 1 lemon (about 2 tablespoons)
- 1/4 cup filtered water
What you do:
- In a food processor, pulverize garlic and salt. Add cashews and process until finely ground.
- Add lemon juice and mix well. Slowly add water one tablespoon at a time until a smooth consistency is reached.
