Cashew Fondue

Cashew nuts are an excellent source of iron, magnesium, phosphorus, zinc, and selenium. The fondue is delicious stuffed in a tomato or chile pepper, rolled up with fresh vegetables in nori, or used as a dip for crudité.

What you need:

  • 1 clove garlic
  • 1 teaspoon sea salt
  • 2 cups cashews
  • Juice of 1 lemon (about 2 tablespoons)
  • 1/4 cup filtered water

What you do:

  1. In a food processor, pulverize garlic and salt. Add cashews and process until finely ground.
  2. Add lemon juice and mix well. Slowly add water one tablespoon at a time until a smooth consistency is reached.
