Raw Mexican Rice
This is a fresh alternative to cooked rice. The main ingredient, acorn squash, is loaded with fiber and beta carotene, which may help prevent certain types of cancer.

Serves 4
What you need:
- 1 acorn squash, peeled, seeded, and cubed
- 1 large tomato, seeded and chopped
- 2 tablespoons yellow onion, chopped
- 1/4 cup cilantro, chopped
- 1 teaspoon sea salt
What you do:
- In a food processor, break apart squash into small, rice-sized pieces. Place in a large mixing bowl.
- Add tomatoes, onion, cilantro, and salt. Mix gently and enjoy with raw crackers or fresh vegetables.
