Raw Mexican Rice

This is a fresh alternative to cooked rice. The main ingredient, acorn squash, is loaded with fiber and beta carotene, which may help prevent certain types of cancer.

What you need:

  • 1 acorn squash, peeled, seeded, and cubed
  • 1 large tomato, seeded and chopped
  • 2 tablespoons yellow onion, chopped
  • 1/4 cup cilantro, chopped
  • 1 teaspoon sea salt

What you do:

  1. In a food processor, break apart squash into small, rice-sized pieces. Place in a large mixing bowl.
  2. Add tomatoes, onion, cilantro, and salt. Mix gently and enjoy with raw crackers or fresh vegetables.
