In honor of Valentine’s Day, vegan chef J. Scot Jones has created a special holiday menu of romantic recipes for diners to recreate at home. The three-course meal, titled “Love At First Bite,” includes Artichoke and Tomato Bisque, Pine Nut and Basil-Crusted Gardein Scallopini, and Italian Banana Peppers stuffed with Fresh Herb Risotto. The dinner also includes recipes for Cashew Cream and Tofu Ricotta, which are ingredients for two of the dishes. Jones is a partner and executive chef at Ohio’s Vegiterranean restaurant and has spent more than 20 years mastering the art of fine cuisine.
