More than 25 years ago, the Berliner family made cruelty-free cuisine convenient with their line of Amy’s Kitchen frozen vegetarian foods. The Berliners plan to increase the availability of their grab-and-go style of expedited eats by opening a drive-through restaurant, reports the North Bay Business Journal. The family purchased nearly three acres of land in Rohnert Park, CA and will submit plans for a 3,500-square-foot restaurant that they hope to open by 2014. The inspiration for a brick-and-mortar establishment came from customer suggestions nearly 15 years ago, but a healthy fast food restaurant is more appropriate now than ever. According to a 2013 study released by food-industry consulting company Technomic, approximately 64 percent of consumers report that eating healthy is important.
