Luxury Hotel in Boulder Now Offers Vegan Menu
Boulder residents can now indulge in Mediterranean-inspired vegan food during their spa day.

St. Julien, a luxury hotel and spa in Boulder, CO, is infusing a cruelty-free twist into their all-inclusive atmosphere of relaxation with a vegan buffet menu. According to The Denver Post, St. Julien’s offerings include a Mediterranean-inspired spread that has an eclectic array of dishes ranging from curried squash soup and paninis to pizza and a chocolate fountain for dessert. At the helm of St. Julien’s plant-based buffet is Chef Laurent Mechin, who uses his French cooking experience to infuse a flavorful flare into his food. “We don’t want just a pasta salad and some tofu,” he told the news source. “I like flavor. I worked in the south of France where, yes, there is a lot of seafood, but a lot of the diet is plant-based.
