Restaurant Editor Predicts Veg Celeb Chefs in 2014

Cookbook authors and internationally famed chefs are making veganism bigger than ever in 2014.

With the onset of a fresh year, cultural gurus are predicting what trends will dominate the next 365 days, and according to Food and Wine’s restaurant editor Kate Krader, vegan celebrity chefs are among 2014’s favorable forecasts. Krader notes on CNN’s website that globally renowned restaurateur Jean-Georges Vongerichten’s forthcoming New York City raw eatery, ABC Home, is a sign of big chefs doing big things with plant-based food. She also cites Rene Redzepi, an internationally lauded chef from Copenhagen, who has added mushroom steaks to his specialty repertoire; also, Redzepi reportedly told the Economist that people should include more vegetables in their diets. Krader reports that even cookbook authors are going the way of the vegetarian—British Chef April Bloomfield is releasing A Girl and Her Greens, a stark contrast to her earlier work A Girl and Her Pig.
