Vegan eatery GreenSpace Café—owned by cardiologist Joel Kahn and his son Daniel Kahn—will celebrate its grand opening in Ferndale, MI today. The restaurant will serve handcrafted, GMO-free, plant-based food with a selection of customized cocktails made from ingredients such as local Saskatoon jam and root beer kombucha. The globally-inspired menu will also feature Mediterranean Bruschetta and Korean Taquitos made with mung beans, rice, gochujang-marinated tofu, kimchi, and avocado. Kahn is a famed cardiologist and author who has advocated plant-based eating for heart health for more than 30 years.
