Last week, cook Grant W. Melton prepared an easy-to-make vegan pumpkin pie on Rachael Ray Show using a crust that swapped shortening for butter. To Ray’s delight, Melton filled the pie with pumpkin purée and topped it with a coconut-based whipped topping. While the show doesn’t often feature vegan food, Ray has recently posed with chef Chloe Coscarelli and her vegan mac n’ cheese on Instagram at this year’s New York City Food & Wine Festival.
