Salt Lake City, UT restaurant owner James Mouritsen is challenging vegan entrepreneurs to submit “a great vegan food cart concept” during the month of September to win his vegan food cart. The 18-year vegan would rather award his cart to a vegan and ensure it remains plant-based than sell it and have someone transform into it a meat-based entity. In 500 words or fewer, proposals should demonstrate an understanding of vegan food and basic restaurant business. Contestants must submit a proposal, entry fee, and online form by September 29. The winner will be selected by a board of independent judges (Mouritsen will not be one of them) with participants notified by October 13.
