College Students Love New Vegan Cafeteria Options

Vegan mayo and cookies are a big hit among students and staffers.

A recent feature in the Portland Press Herald revealed that students and staffers at the University of Maine are thrilled with the new on-campus vegan options—namely Just Mayo and Just Cookies—provided by vegan company Hampton Creek. A student group called the Vegan Education & Empowerment Coalition successfully lobbied the school to make the vegan switch earlier this year. When the school’s quality-assurance manager Kerry Chasteen first tasted Just Cookies, she recalls that “they were far above the quality of (the non-vegan cookies) we were serving.” As for the mayonnaise, head of dining services Glen Taylor exclaimed, “This is as good as or better than anything else.” Last year, the vegan company—whose revenue shot up by 350 percent in 2015—partnered with food-service giant Compass Group to bring Just Mayo and Just Cookies to campuses nationwide, a move that Hampton Creek’s CEO Josh Tetrick says will “create meaningful change” in our broken food system.
