Wildly popular chef and restaurateur Chloe Coscarelli appeared on The Today Show this morning to prepare her vegan beet fettuccine Alfredo recipe with host Matt Lauer. Coscarelli used soaked cashews—blended with fork-tender beets, caramelized onions, and lemon juice—as the base for her alfredo sauce, and tofu to create a vegan ricotta. Lauer said, “This is really good, Chloe,” and guest taster actress Mindy Kaling exclaimed “it’s delicious!” upon trying Coscarelli’s creation. The enterprising vegan chef opened her flagship by CHLOE restaurant—now known for its hour-long wait lines, celebrity customers, and impressive veggie burger—last summer and is expanding the fast-casual eatery to other locations in New York, Boston, and Los Angeles.
