As a way to promote the United Kingdom’s burgeoning vegan scene, The Canvas Café in Shoreditch will be adding “freakshakes” to its menu beginning Tuesday. The café’s owners have created a vegan version of a food sensation on Instagram wherein a coconut-based ice cream is blended with soy milk and topped with coconut whipped cream, raw cake, a selection of sauces, and other add-ons such as vegan meringue made with aquafaba—or “bean water” derived from chickpea brine which acts similarly to egg whites when whipped. The “freakshakes” will be available in several flavors including avocado, coconut, and raspberry. The introduction of the freakshake stands as a symbol that vegan food can be both healthy and over-the-top indulgent.
