After 118 years in business, restaurant Tunday Kababi in Lucknow, India has decided to add vegetarian options to its long-standing meat-centric kebab menu. The eatery was founded by one-armed-chef Haji Murad Ali Tunday more than a century ago and is now run by his grandson Mohammad Rizwan. In addition to adding items such as vegetarian biryani, chana dal, and a vegetable kebab option—featuring potato, ridged gourd, and yam—Tunday set up a second kitchen to keep vegetarian and meat items separate. “For several years, we have been getting requests to develop a vegetarian menu, and now our patrons are happily welcoming it,” Rizwan said.
