Vegan Chef Makes Pasta with Matt Lauer on Today Show

Vegan chef and restaurateur Chloe Coscarelli—owner of acclaimed New York City vegan restaurant by CHLOE—appeared on a recent segment of “Garden on the Go” on The Today Show. During the program, Coscarelli used produce from the White House garden to prepare a vegan pasta dish—orecchiette in a no-cook sauce—and potato skins with avocado salsa with television personality Matt Lauer. “This is a vegan recipe, and a lot of people think it has to be boring,” Lauer said. “It’s not boring—it’s delicious.” A panel of three tasters also raved about Coscarelli’s recipes. Lauer directed a comment to one of the tasters, stating, “You just devoured a vegan recipe,” to which she responded, “I know, and I enjoyed it.” Coscarelli—who was named as one of Zagat’s 30 most influential entrepreneurs under 30—previously appeared on the show in April, in which she made beet fettuccine Alfredo to similar praise.
