David Lipman will assume the position of Chief Science Officer at Silicon Valley-based vegan startup Impossible Foods—the company behind the vegan “bleeding” Impossible Burger—next month. Lipman was raised in the meat industry and comes from a long line of butchers and cattle ranchers. His most recent position was the director of the National Center for Biotechnology Information, where he became one of the most cited scientists in the food technology arena by the Centers for Disease Control and Prevention and the United States Department of Agriculture. “This is something I’ve been following,” Lipman said about Impossible Foods. “The level of science they’re bringing to food, I’ve never seen anything like it.” Impossible Foods is currently building a facility in Oakland, CA that will be able to support the production of one million pounds of Impossible Burger patties per month. Lipman’s employment at Impossible Foods isn’t the first time a meat industry professional chose to shift to a plant-based career. Brian Swette was an executive at Burger King before co-founding vegetarian company Sweet Earth Natural Foods with his wife Kelly in 2012.
