Canadian vegan pizza shop Virtuous Pie will open its first US location in Portland, OR this June. The shop premiered in Vancouver in 2016 with the mission of serving locally sourced, sustainable foods with mass appeal. “Not only does Portland have a great food scene, but it has a great vegan scene as well,” Virtuous Pie’s Executive Chef Jim Vesal said. “We really want to show people that plant-based cooking has evolved and Portland is the perfect place with its forward-thinking, sustainable mindset and conscious dining habits.” The 1,900 square-foot, two-level space will feature reclaimed Douglas fir interiors, custom wallpaper, colorful furniture, and several seating areas—including a space for large groups. The menu will be comprised of pizzas topped with housemade plant-based cheeses such as cashew mozzarella, almond ricotta, and tofu-based feta, and dairy-free ice cream in flavors such as Coffee + Doughnuts, Hawaiian Vanilla, and Double Chocolate + Salted Caramel. The pizzeria will also serve local coffee provided by Heart Coffee Roasters. Once it touches down in Portland, Virtuous Pie plans to partner with community organizations and charities to provide food donations, cooking classes, and meal programs. As proof that Portland continues to be a hotbed of vegan activity, a Buzzfeed video released last about the city’s vegan mini-mall gained more than 3 million views in a period of 24 hours.
