Spiralized vegetable company Veggie Noodle Co. completed construction on its expanded production facility in Austin, TX. To celebrate, the vegan company—which makes packaged spiralized zucchini, sweet potato, butternut, and beet noodles—will hold a grand opening on October 3, complete with a long spiralized noodle-cutting ceremony and a toast to the company’s growing success. The new 43,000 square-foot custom-built production plant will be able to increase the noodle company’s production fivefold. “It’s not about what it is,” company founder and self-professed “Veggie Nerd” Mason Arnold said. “It’s about what it can become.” The company closed its series A investment round in May to facilitate the expansion, which will include new and improved spiralization equipment to help the company create “oodles of noodles” and new products such as cauliflower and broccoli rice.
