Denver Chef Leaves Top Restaurant, Hosts Vegan Luau

Ashley McBrady—formerly the chef de cuisine at fine-dining restaurant 12@Madison—is now preparing vegan Puu Puu Platters, desserts, and Hawaiian cocktails.

Acclaimed chef Ashley McBrady will launch the first dinner of her new pop-up series Siesta Supper Club on October 26 at eatery Port Side in Denver, CO. The chef—who previously helmed fine-dining American restaurant 12@Madison—will create plant-based versions of Hawaiian luau favorites such as onigiri, Roasted Beet and Avocado Poke, a Puu Puu Platter, Teriyaki Tofu and Pineapple Skewers, two desserts, and tropical cocktails. “Wear a goofy Hawaiian shirt and hang with your friends,” the supper club urged on Instagram. McBrady does not exclusively prepare vegan foods but according to Eater, sees her plant-based pop-up as a way to “stay on top of my game,” while searching for a permanent position at another restaurant.
