WildFlower Café in Red Hook, NY opened last month as Hudson Valley’s first vegan burger bar and one of only a few restaurants in the area to offer the Impossible Burger on its menu. “WildFlower Café was created as a result of three friends who love food and who also love animals,” WildFlower co-owner Bobbi Jo Forte told VegNews. “There was no question whether or not the burger bar would be vegan—anyone can profit off the slaughter of an animal, but that’s not what we’re about. We wanted to take on the challenge of defying what a ‘burger’ should look like and taste like, so we set out to create the ultimate vegan burger.” Wildflower offers four signature burgers such as a Cheezburger and an Onion Lover Burger, as well as build a burger options, which allow customers to load their burgers with their favorite toppings and sauces. The menu also includes sandwiches, fries, onion rings, and milkshakes. In its previous iteration, WildFlower was Morgan’s Cat Cafe, a nonprofit cat café owned by Forte, which has since been relocated upstairs. Customers can watch the cats on a big-screen TV while eating at WildFlower or take their meals upstairs to the cat adoption center. Forte hopes to eventually open more burger bar locations and acquire a food truck to attend events.
