Vegan Just Egg Expands to Washington DC

Food technology startup JUST expands its vegan mung bean-based scrambled egg replacer to Equinox, the second restaurant to offer the innovative product in the United States.

This month, Washington DC-based Equinox Restaurant will become the second restaurant in the United States to offer Just Egg (formerly Just Scramble)—a mung-bean based vegan egg replacer made by food technology startup JUST. “We’re always seeking out new and innovative ways to enhance our plant-based offerings and Just Egg fits the bill,” Equinox Restaurant Chef Todd Gray told VegNews. “It’s a remarkable product—it really does mimic a real egg and scrambles like one.” On June 26, the restaurant will be hosting an event where Gray will make a variety of plant-based breakfast items using Just Egg. “I’ve enjoyed experimenting with ways to use Just Egg in a variety of dishes including berries and sabayon, an egg sandwich, and a creamy Hollandaise sauce that’s gotten rave reviews from our staff (most of whom are omnivores),” Gray said. Last year, JUST debuted Just Egg on the menu at Flore in San Francisco before expanding the offering in January to the menu of vegan-friendly supermarket and deli chain Green Common in Hong Kong.
