Vegan business Bar Boulevard will open this month as the first all-vegan bar in Las Vegas. The bar will be helmed by a local vegan chef, “Steven the Vegan,” who also operates vegan catering company Human(e) Food 702. “Cruelty-free food for humans—that my concept,” the chef told local media outlet Vegans, Baby. “Vegan food made by a vegan. It’s not a common thing to have a vegan chef, making vegan food in the city.” The menu will consist of dishes such as fish tacos, mac and cheese, chili, and raw Pad Thai, along with a variety of all-vegan alcoholic beverages. In recent months, the vegan scene is Las Vegas has mushroomed with the opening of comfort-food eateries Amber’s Smoked Vegan and Blinders Burgers & Brunch, and the addition of vegan menus at several nearby steakhouses, including Hank’s Fine Steaks and Martinis, which opened inside the Green Valley Ranch resort in Henderson, NV.
