New vegan restaurant and jazz bar When Polly Met Fergie will launch later this summer at the Westgate Arcade in Peterborough, UK. Owner Alastair Norwell’s transition to a vegan lifestyle inspired him to open the music-centric eatery as a way to revisit his passion for food. The two-story eatery’s café portion—which was named after Norwell’s two dogs—will focus on plant-based dishes such as eggless benedict, fresh pasta, scrambled ackee, and Southern fried chickenless chicken. Norwell also aims to feature local musicians at the upstairs jazz cocktail bar with a New York jazz bar-inspired atmosphere. “We are looking to create a smaller, interesting, individual concept to support the larger entities in the city,” Norwell said. “As people stroll around the city, the smaller creative cafés and bars will be perfectly placed to offer a personal romantic feel to your day.”
