Vegan ice cream truck Little Bean will serve inventive chickpea-based ice cream in Portland, OR starting in October. Creators Micah Camden and Matt Lynch—the team behind non-vegan restaurants Super Deluxe and Boxer Ramen—saw an opportunity in the market for an allergen-friendly concept that is inclusive of vegan consumers. “It’s for the allergens and it’s for the environment,” Camden told Eater PDX. “Anything they can do with soy, I can do with chickpeas.” The truck will initially serve eight flavors made with chickpea “milk” (such as scotch-laced vanilla, matcha, and chipotle-spiked chocolate) and served in chickpea-based cones; lattes featuring the novel ingredient; and a variety of baked goods. “We’re going to be out all summer long,” Camden said. “We’re just letting people know there’s something out there other than [expletive] almond-milk ice cream.”
