British restaurant chain Wagamama recently announced the addition of new vegan breakfast dishes at its United Kingdom airport locations. The Japanese-inspired eatery will offer vegan options such as scrambled tofu with maple seitan bacon, beetroot seitan sausage, mushrooms, and tomato; roti wraps with sriracha mayonnaise; coconut porridge; and coconut yogurt bowls. In 2017, the chain added an expansive vegan food and drink menu after noticing that many customers would order dishes and request no animal-based ingredients. Some of the menu items include Yasai Yaki Soba (noodles with mushrooms, peppers, bean sprouts, and white and spring onions), Yasai Pad Thai (tofu, bean sprouts, leeks, chilli, and red onion), and Yasai Gyoza (steamed dumplings). In recent years an increasing number of restaurants across the UK have added vegan options or dedicated vegan menus to their offerings. This month alone, TGI Fridays debuted a vegan “bleeding” burger, Pizza Hut added a vegan jackfruit pizza to 253 locations, and pizza chain Papa John’s added three vegan pizzas and cheesy “scrolls” to its menu.
