Plant-based meal-kit service Purple Carrot recently launched a Thanksgiving box which ships nationwide. The box includes ingredients and recipes for: Hasselback Butternut Squash with Cider Glaze & Rosemary Pecan Dukkah; Rustic Ciabatta Stuffing with Root Vegetables & Herb Sausage; Roasted Brussel Sprouts with Oyster Mushrooms & Garlic Kimchi Butter; Classic Gravy; and Cranberry Citrus Cake with Coconut Whip Cream. “The hope is that by purchasing this box customers can dedicate more of their Thanksgiving to family and friends, and let us handle the meal prep,” Andrea Nordby, Head of Culinary at Purple Carrot, told VegNews. “With this in mind, it was important to create incredible dishes that are not only easy to make, but will have both vegans and non-vegans alike asking for seconds.” Purple Carrot was founded in Boston in 2014 by Andy Levitt with the help of longtime New York Times columnist Mark Bitman. The company aims to create easy-to-make vegan meal kits with exciting recipes and previously partnered with England Patriots quarterback Tom Brady to create the TB12 Performance meal kit, which highlighted gluten-free, high-protein, and low-refined sugar foods and recipes. Customers do not need to have a subscription with Purple Carrot to order the Thanksgiving box, which costs $65 and serves four people.
