On November 18, new vegan brand Wellness Sushi will make its public debut as a pop-up at Alternation Brewing Co. in Denver, CO. Wellness Sushi founder Steven Lee—who worked as a traditional sushi chef for six years—and his wife Phoebe Lee created the concept with the mission of “changing the game by providing a delicious but nutritious, authentic plant-based sushi for everyone.” The four-course pop-up menu ($45 per person, includes one beer or non-alcoholic beverage) will feature veggie gyozas and seaweed salad; six, black rice-based sushi rolls (some made with Ocean Hugger Foods’ tomato-based Ahimi and eggplant-based Unami); a wellness bowl topped with Ahimi; and matcha green tea pudding for dessert. After Wellness Sushi debuts at Alternation Brewing (which will stock the brand’s vegan sushi in its taproom), the company will sell ready-to-eat meals at retailers Choice Market and Nooch Vegan Market, along with offering catering and delivery services.
