Canada-based vegan chain Copper Branch plans to open 15 new locations in North America by April 22 (Earth Day)—which would bring its locations up to 50, making it the largest vegan chain in the world. In January, the restaurant made its United States debut with a location in Fort Lauderdale, FL and is planning a second US location in New York City in April. In Canada, Copper Branch will open five locations in Montreal, two in both Toronto and Calgary, and one new restaurant in Quebec City, Ottawa, New Brunswick, and Vancouver during March and April. With a focus on plant-based whole foods, the chain’s menu features a variety of bowls, soups, sandwiches, burgers, wraps, salads, desserts, and smoothies that feature ingredients such as chia seeds, organic kamut, and turmeric. The company also donates a portion of the transactions made on its loyalty card to Rainforest Trust, an environmental organization that protects the world’s tropical rainforests. “Expanding Copper Branch has been our focus as we want to continue to change the way plant-based foods are perceived globally and make chef-inspired flavors accessible, while contributing to the protection of our planet and ecosystems though incredible initiatives like with Rainforest Trust and One Tree Planted,” Copper Branch CEO Rio Infantino said. By 2020, the chain expects to operate more than 200 locations, mostly in the United States and Western Europe.
