On July 10, culinary landmark The James Beard House will host a vegan dinner highlighting the cuisine of Las Vegas. The event is a collaboration between The James Beard Foundation and Diana Edelman, founder of media brand Vegans, Baby. “To see Las Vegas recognized for its vegan dining scene and vegan options by the James Beard House is incredible,” Edelman said. “Being a part of the vegan culinary scene and seeing how much it has grown since launching Vegans, Baby has been an honor, and to be able to share my love for the food here, my passion for a vegan lifestyle, as well as some of the talented chefs creating innovative vegan cuisine is nothing short of a dream.” The event features dishes cooked by five Las Vegas chefs: Andrew Carroll of CATCH Las Vegas, Brian Howard of Sparrow + Wolf, Oscar Amador of EDO Gastro Tapas & Wine, and Vincent Pellerin and Yuri Szarzewski (both from EATT Gourmet Bistro). “The James Beard Foundation is absolutely thrilled and honored to partner with Vegans, Baby and founder Diana Edelman to highlight a group of chefs and restaurants that are not only heating up the Vegas dining scene, but who are also using their unique culinary voices to create fabulous vegan dishes for this one-night-only James Beard House experience,” Izabela Wojcik, director of programming at the James Beard House, said. Vegan options in Las Vegas have increased rapidly in recent years with options such as Phyto’s Vegan Eats (Sin City’s first vegan hot dog cart), a drive-through location of popular haunt Poncho’s Vegan Tacos, and POTs—the only Egyptian restaurant in Las Vegas that transitioned to an all-vegan menu last year.
