Coachella’s Culinary Director Opens New Vegan Eatery in Los Angeles

New restaurant Nic’s on Beverly will offer innovative takes on comfort food with plant-based dishes such as Wood-Fired Detroit-Style Pizza, Tempura Avocado Tacos, and Vegetable Pot Pie.

On June 21, Nic Adler—vegan culinary director of Goldenvoice festivals such as Coachella and Eat Drink Vegan, and co-founder of vegan burger concept Monty’s Good Burger—will open new vegan restaurant and cocktail bar Nic’s on Beverly in Los Angeles. The restaurant’s decor hints of ‘70s and ‘80s nostalgia with records, books, and old photos displayed on shelves along the walls. Its menu features dishes made from all house-made ingredients, including vegan versions of smoked Gouda, parmesan, and ricotta cheeses. Dinner dishes include Avocado Crispy Rice with ponzu, citrus, and cilantro; Falafel Burger with truffle tahini, tomato relish, and harissa-spiced secret sauce with signature gratin fries; and Vegetable Pot Pie with artichokes, baby zucchini, potatoes, carrots, and pearl onions. The restaurant’s bar will offer innovative drinks such as a house-made horchata cocktail garnished with a vegan egg. Nic’s will also begin serving lunch on June 24 and brunch on June 29, offering dishes such as Scallion Biscuits with mushroom gravy, fennel, and smoked Gouda; Wood-Fired Detroit-Style Pizza; and Tempura Avocado Tacos with tomatillo salsa verde and serrano aioli.
