Target Launches Vegan Cupcakes at 117 Stores

Starting this month, all 177 Target locations across Northern California will add Rubicon Bakers’ cupcakes to their shelves. Three of the eight flavors offered will be vegan and include Vegan Chocolate Blackout, Vegan Neapolitan, and Vegan Vanilla. Founded in 1993 with the slogan “Bake a Better World,” California-based Rubicon Bakers is known for its social mission of employing populations that have disadvantages in the job market, including former prisoners, survivors of abuse, and people who struggle with homelessness. “We’re thrilled to partner with Target to provide our line of delicious, hand-finished cupcakes to its customers,” Rubicon Bakers President Andrew Stoloff said. “Just like our everyday cupcake line, our vegan options are decadent, rich, and ready to be enjoyed by all types of eaters.” Rubicon Bakers spent one year developing its vegan cakes and cupcakes before launching the line last year at retailers such as Whole Foods Market, Sprouts, Safeway, and Natural Grocers.
