Today, New York City-based treats company Baked by Melissa launched its first vegan mini-cupcake line at its 14 shops and online (available for delivery nationwide). The new line features six flavors, all made with oat milk-based icing: Peanut Butter with peanut butter cake that’s stuffed with peanut butter, peanut butter icing, and topped with salty peanuts; Chocolate Vanilla Chip with chocolate cake, vanilla icing, and topped with rainbow sprinkles and mini chocolate chips; Strawberry with strawberry cake and icing, topped with strawberry streusel; Cookie Dough with yellow cake that’s stuffed with cookie dough, chocolate icing, and topped with cookie dough; Triple Chocolate Chip with chocolate cake that’s stuffed with fudge, chocolate icing, and topped with candy-coated chocolate chips; and Superfood with spirulina açaí cake, beet icing, topped with sesame, sunflower seed, and cinnamon streusel. Baked by Melissa was founded by Melissa Ben-Ishay, a lifelong baker who started the company in 2008 after being fired from a job in advertising. “As more people embrace a vegan lifestyle, it’s a request that we’ve been getting more often, and it’s super important to me that Baked by Melissa can be enjoyed by everyone,” Ben-Ishay told VegNews. “Creating a vegan assortment of bite-size cupcakes is something I’ve wanted to do for quite some time and I could not be more proud of this product line. One of my all-time favorite cupcake flavors is in this collection as well—the superfood cupcake.”
