This week, Pinky Cole—the entrepreneur behind popular Atlanta, GA business Slutty Vegan—released details about her new concept Bar Vegan, a fun, cocktail-centric eatery. Set to open in February on the second floor of the Ponce City Market in Atlanta, Bar Vegan was created to delight guests with a concept that Cole calls “bar theater.” The menu will feature vegan bar food such as sandwiches, salads, egg rolls, cauliflower wings, mushroom cheesesteaks, sweet potato tater tots, along with versions of Slutty Vegan favorites. However, Bar Vegan’s main focus will fall on its “experience cocktail” menu with spins on classic drinks such as margaritas, Cosmopolitans, Old Fashioneds, and Lemon Drop Martinis made with fresh juices. Pushing the envelope on what cocktails can be, Bar Vegan will prepare beverages tableside and present them in exciting ways, including The Foreign Fruit Punch which will be served in an “active” volcano. Other cocktails will be served in creative receptacles such as fire extinguishers, gas cans, ferris wheels, or bank safes, and come with musical sound bites. Bar Vegan will also serve a “Shaken not Slurred” mocktail menu. The atmosphere promises to be fun and jovial, with focal walls and design elements created to encourage guests to take photographs. 

“Today’s culture is exploring the truth, and the truth that we’re walking into is that, as a community, we are beginning to eat healthier and focus more on the things we put into our bodies,” Cole said. “Bar Vegan’s aim is to create an enjoyable experience for those who want to eat well and enjoy a bit of fun and flare, while still maintaining the vegan lifestyle.” During the ongoing COVID-19 pandemic, the bar will follow extensive protocols to keep its patrons and staff healthy and safe. 

Slutty Vegan’s great success
Cole first launched Slutty Vegan as a food truck in August 2018, selling provocatively named vegan burgers made with an Impossible Burger patty that comes stacked with various toppings and slathered with a secret sauce. After the truck drew five-hour lines of more than 500 hungry guests waiting to be “sluttified,” Cole opened her first brick-and-mortar location in Atlanta in January 2018—attracting 1,200 customers on opening day. Currently, Cole operates three Slutty Vegan locations in Georgia, including an outpost in the Edgewood neighborhood—known as the childhood neighborhood of civil rights icon Dr. Martin Luther King Jr. Slutty Vegan’s first restaurant location outside of Georgia is planned for Birmingham, AL later this year.
