Creamy Vegan Pumpkin Spice Chai Lattes

Fight off the cold weather blues with this dreamy vegan latte, filled with the sweet and spicy flavors of pumpkin and cinnamon. 

Serves: 2

Warm up your mornings with this homemade pumpkin spice chai latte from the One Green Planet’s Fall: Plant-Based Recipes to Celebrate Harvest Season cookbook. Add a shot (or two) of espresso for an extra caffeine kick. 

What you need:

2 chai tea bags
2 cups plain, unsweetened vegan milk
6 tablespoons pumpkin purée
2 teaspoons maple syrup
¼ teaspoon vanilla extract
½ teaspoon pumpkin spice blend

2 cinnamon sticks, for garnish

What you do:

1. Into a saucepan, add tea bags, milk, pumpkin purée, maple syrup, vanilla, and pumpkin spice blend. Bring to a slow simmer for 2 to 3 minutes. Serve in two mugs, each garnished with a cinnamon stick.
