Waterfront restaurant Mediamatic ETEN plans to reopen in Amsterdam with a new concept: four-course plant-based meals served in individual greenhouses—called “chambre séparée.” The diner series is already sold out through the end of June and will likely feature servers wearing protective face shields who will bring food out on long planks to further distance themselves from diners. While the restaurant previously served some animal products (such as fish and oysters), the new iteration will consist of a plant-based dinner for two at a cost of €100 ($108).

“In these times we are reinspired by contamination precautions and the redesign of togetherness,” the restaurant wrote. “Our greenhouses protect you from the outside and others while offering you a unique experience of intimate dining.” On April 27, the restaurant trailed the concept with friends and should the government not allow restaurants to operate in this way by June, Mediamatic ETEN will refund all bookings.
