Vegan bakery Pie, Pie My Darling will open its first storefront in Chicago, IL later this year. The 1,600-square-foot space will offer Pie, Pie My Darling’s signature three-layer cakes in flavors such as Cookies and Cream, Black Velvet, Snickerdoodle, and Lemon, plus brownies, cupcakes, and a seasonally rotating selection of cookies, pies, and new confections. Since 2014, Pie, Pie My Darling founder and head baker Heather Bodine-Lederman has sold her vegan desserts at various pop-up markets, festivals, and restaurants in Chicago. The self-taught pastry chef initially planned to open a storefront in 2017 but her chosen location’s previous tenants forced her to put her plans on hold. After various setbacks, she was able to take over the lease of her previously shared kitchen space to create Pie, Pie My Darling’s permanent location. “I’m humbled and touched that so many Chicagoans want Pie, Pie My Darling to be a part of their most special memories—birthdays, weddings, baby showers,” Bodine-Lederman said. “Having my own space will allow me to accept more orders, take on more wholesale accounts, and to offer something sweet every day of the week.” Bodine-Lederman launched an Indiegogo fundraising campaign to help cover startup costs, including licensing, remodeling, and purchasing kitchen equipment.
