Vegan eatery Alibi will open in March on the ground floor of the Ovolo Hotel in Sydney—making it the first hotel in Australia to house an entirely plant-based restaurant. The concept is being developed in partnership with famed vegan chef and restaurateur Matthew Kenney. “We have listened to the market and know healthy eating is a priority,” Ovolo Hotels CEO Girish Jhunjhnuwala said, “so we made the decision to partner with Matthew to develop a new plant-based concept not yet seen in an Australian hotel restaurant.” Kenney will help develop Alibi’s plant-based menu—which will also feature local wine and cocktails—with executive chef Kasper Christensen. Kenney currently operates a number of plant-based businesses around the world, including PLANTLAB culinary school, a retreat in Thailand, and a number of restaurants such as Plant Food + Wine in Los Angeles, PLNTHOUSE in Miami, and Essence Cuisine in London.
