Brooklyn’s Newest Vegan Fine-Dining Eatery Serves TV Dinners

Newly opened Sans serves up fancy terrines, flambée, and a veganized (and fancified) version of America’s laziest frozen meal.

Vegan eatery Sans recently opened in the Carroll Gardens neighborhood of Brooklyn, NY. Chef Champ Jones created a playful menu that skews toward fine-dining, but includes reimagined dishes such as the iconic TV dinner—which consists of a mushroom farce served with classic sides: peas and carrots, and “vegan pommes purée” (or mashed potatoes).“We want to appeal to people outside of the vegan world,” Jones told Grub Street. “The mission is to be delicious, pleasurable, and accessible to all people, if they’re open-minded to go for what we’re doing.” What Sans is doing, in addition to TV dinners, is serving plant-based dishes that evoke traditional meat-flavors using innovative ingredients and techniques (in lieu of meat- and cheese-alternatives) to create menu items such as tarte flambée with maitake mushrooms, plum terrine with pickled plum jam, and deconstructed lasagne (pictured) featuring brioche bread made with aquafaba (chickpea brine) and soy milk. Jones plans to keep Sans open for a one-year trail run, but may commit to it for as long as the concept proves successful.
