During a recent interview on Bloomberg Media’s TicToc Dines video, titled “Steak King Leans Vegan,” Argentine chef Francis Mallmann discussed the global shift towards plant-based foods. Mallmann is known for cooking whole animal carcasses on an open fire—a technique that was featured on Mallmann’s episode of Netflix docu-series Chef’s Table. “I think that in 30 more years,” Mallmann said in the video, “we won’t eat any more animals.” In the meantime, Mallmann explained that he wants to make vegans feel welcome at his restaurants. “My aim is to make main dishes for vegans which will be like a steak. I want them to feel that they sit down for lunch or dinner and they eat something as substantial as a steak.” Host Richard Vines asked Mallmann how he reconciles the idea that Argentina is known for its culture of eating beef and Mallmann’s newfound advocacy of plant-based eating. “But change is life,” Mallmann responded. “We have to learn to change. And we have to learn to say, ‘Yesterday I believed it was white…today it’s black.’” Last year, after participating in a $17 million investment round in slaughter-free startup Memphis Meats, billionaire Richard Branson—founder of travel corporation Virgin Group—expressed his belief that the world will be meat-free in 30 years.
