New vegan eatery Chef Chloe and the Vegan Café—a concept from famed vegan chef Chloe Coscarelli—opened Saturday in the St. Roch Market food hall in Miami, FL. The 10,000 square-foot space features 12 curated eateries, and Coscarelli’s café showcases plant-based menu items such as reimagined truffle avocado toast, butternut-squash nachos, salads featuring guacamole and mango, and freshly baked goods. The chef’s all-female staff is outfitted in custom uniforms made by Brooklyn-based vegan fashion brand VAUTE Couture. Coscarelli told VegNews that she chose Miami for the location of her new eatery after cooking at the South Beach Wine & Food Festival last year and discovering the wealth of local produce and warmth of the surrounding community. “I’ve learned how critical it is to surround yourself with good people, so I’m excited to be working on this project with my incredible vegan girl team,” Coscarelli said. “I’m so inspired by everyone I’m working with, which makes waking up for the 5am baking shift a piece of cake.” The eatery is Coscarelli’s newest venture after leaving her brand by CHLOE last year after irreparable disagreements with her partners. “I hope my customers learn that you do not have to hurt animals to enjoy exciting unique culinary experiences,” Coscarelli said. “I’m so excited to share my new recipes with Miami and show people how fun and flavorful vegan food can be.” Coscarelli’s new cookbook, Chloe Flavor: Saucy, Crispy, Spicy, Vegan, is currently available for pre-order and will ship on March 6, 2018.
