Vegan bakery Copenhagen Cafe & Bakery will open in the Parkdale neighborhood of Toronto, Canada this summer. Earlier this year, vegan collective The 5700, Inc. incorporated part of Parkdale into “Vegandale,” a downtown city block that will feature seven vegan businesses by the end of summer. The bakery will be operated by the Schlederman family, who originate from Denmark and also operate the Vegan Danish Bakery in the Thornhill region of Toronto. “We are so thrilled to be able to provide Vegandale with a new staple for freshly baked treats,” Copenhagen co-owner Shannon Schlederman said. “Forget what you’ve been told about veganism, and stop by for a little indulgence. We promise it won’t disappoint.” The bakery will feature a European ambiance (complete with chandeliers) and serve coffee and non-caffeinated beverages along with a variety of baked goods, including cupcakes, butter tarts, cheesecake bars, cinnamon sticky buns, and a Danish pastry in a range of flavors. As with all of the businesses operating in Vegandale—which include diner Mythology, comfort-food eatery Doomie’s Home Cookin’, apparel shop The Imperative, and forthcoming Vegandale Brewery—the bakery, according to 5700, will maintain an “unapologetic stance on veganism.”
