Blair Ednie and Michael Craig’s vegan catering and wholesale baked goods company Beet Box has been a mainstay in Denver’s cruelty-free cuisine scene for six years. Recently, the duo brought their confections to a new retail arena when opened up a storefront earlier this month. According to the Denver Westword blog, the store’s bestselling item is the $2 doughnuts, which come in the flavors maple walnut, and coconut, among others, but the location also offers savory snacks like a spinach and mushroom croissant. The bakery also plans to serve gourmet sandwiches and breakfast items including French toast and granola.
